Easy No Bake Margarita Pie

We had a very rainy Saturday, so I decided it would be a good day to try a recipe I found. It sounded like it just may be a very easy dessert to make the next time I am asked to bring something to a party. Well it was just that! Delicious and very easy to prepare with only a few ingredients. Give it a try, I'm sure you will enjoy it a also.

Easy No Bake Margarita Pie

INGREDIENTS

1 & 1/4 cups crushed pretzels
1/2 cup butter, melted
1/4 cup white sugar
2 limes, zested and juiced
1/4 cup orange juice
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed

DIRECTIONS

In a medium bowl, combine crushed pretzels, melted butter, and sugar. Press mixture into a pie pan.
In a large bowl, mix together lime juice, lime zest, orange juice, and sweetened condensed milk. Fold in whipped topping. Spoon filling into pretzel crust. Chill pie for 25 to 30 minutes.

Makes 8 servings.

Brie with Raspberry Sauce Appetizer

This past weekend I was invited to a friends house for a last minute get-together, and was asked to bring an appetizer. My niece had told me about a Brie cheese appetizer that she liked, I was excited to try it as this is my favorite cheese. Rather than making this at home and then having to re-heat it, I made it at my friends house so it could be served right after making it. It has only a few ingredients and is so simple to make, I even brought enough to make another serving just in case it was hit. Good thing I did this tasty appetizer was in high demand. The crusty french bread and fresh fruit, in particular the sliced apples, and red & green grapes vanished faster than the crackers. TIP: Warm the bread if possible, and do not use "light" Brie cheese, it does not melt as well.

Brie with Raspberry Sauce

1 (8 ounce) Brie cheese round

1/4 cup raspberry preserves

1 tablespoon thinly sliced almonds

Place the Brie in a microwave-safe 9" pie plate. Spread the raspberry preserves over the top. Microwave at 50% power for 2 minutes, or until heated through and starting to melt. Sprinkle with the sliced almonds and serve warm.

Serve with crusty french bread, assorted crackers, and fresh fruit (Sliced apples, red & green grapes) are good choices.

Makes 8 servings.

Baby Shower Punch

As you know I am always trying new recipes for parties and showers, and it is a great find when I come across one with a party specific theme.

My latest find is a punch recipe for a baby boy baby shower. When I found this recipe, I will admit I was a bit skeptical... using ice cream in a punch? I made a smaller version, and tried it out on a few friends this past weekend. Turns out this was one of the best punch recipes I have ever tasted! My friends thought it was fantastic as well.

"Baby Blue Cloud Punch"

INGREDIENTS

1 (0.13 ounce) package blue, berry flavored unsweetened drink mix
1 (2 liter) bottle lemon-lime flavored carbonated beverage
1 (64 fluid ounce) bottle white cranberry juice
8 scoops vanilla ice cream
1 cup white sugar, or to taste

DIRECTIONS

In a large punch bowl, stir together the drink mix, lemon-lime soda, and white cranberry juice. Taste, and stir in sugar to your liking. (I added the whole cup.) Float scoops of ice cream on the top. The ice cream melts somewhat and turns the punch a beautiful baby blue color with floating frothy white clouds on the top.

This is the full recipe for 24 servings

Get creative and try other flavors and colors of unsweetened drink mix in place of the blue.

Cute Ideas For Wrapping Baby Shower Gifts

Are you going to a baby shower? Here are some creative ideas for gift wrapping that are just as adorable as the gift you are giving.

If you know the baby is going to be a boy or a girl "baby boy blue” or “baby girl pink" is always appropriate, but you have many other colors to choose from as well. Pastel colors such as, pale yellow, mint green, soft lavender, are just a few of the colors that are just as appropriate, and can make your gift stand out from all of the blue or pink gifts that are sure to be there.

If you're going to a baby shower and the mother is not sure if the baby is going to be a girl or a boy, wrap the gift in white paper, and tie the gift with two ribbons, one pink, and one blue.

Make your package extra special by adding a rattle, hair bow, teething ring, or a small stuffed animal, and fasten the item to your package with colorful pastel ribbon.

For a summer baby shower consider a pretty floral look. Wrap your gift with pastel floral paper or plain pastel colored paper. Use green or purple ribbon and tie it in a pretty bow. Top the package with some small fresh cut summer flowers. Some good choices are, baby's breath, shasta daisies, sea lavender, and canterbury bells. Be sure to cut the stems of the flowers very short, and add the flowers to your package the morning of the baby shower for a fresh look.

Along with party ideas, I am also a big fan of e-cards. I am constantly searching the web looking for the best. Well, I found the best! JacquieLawson.com, I have never seen such beautifully done e-cards before, they are truly works of art. From reading about her I learned she originally trained as an illustrator at St. Martin's School of Art, and has over twenty years' experience of working freelance in many areas of drawing, painting and design, including architectural perspectives, book illustration, and cartoons. Summer Baby Shower Raspberry Dip

This easy to prepare, sweet dip is perfect to use on a summer fruit platter. It is ideal to serve at baby showers because it has a nice pastel pink color. The taste can easily be changed by using your favorite extract flavorings.

INGREDIENTS

1 cup sour cream
1 (8 ounce) package Neufchatel cheese, softened
1/2 cup white sugar
1 tablespoon raspberry extract
1/2 cup fresh raspberries

DIRECTIONS
Place the sour cream, Neufchatel cheese, white sugar and raspberry extract in a medium bowl. With an electric mixer, blend until creamy smooth. Chill in refrigerator for approximately 35 to 40 minutes. Garnish with fresh raspberries to serve.

Tip: Use blueberry extract in place of raspberry, and replace the fresh raspberries with fresh blueberries. (For a baby boy shower theme)

A refreshing summer party drink

I came across this great non-alcoholic drink recipe, and decided to make it for friends at our last barbecue. After trying it I thought it would be a great idea for a summer party or shower, it is easy and quick to fix, and tastes great as well.

Easy Raspberry Lemonade is a non-alcoholic "pink drink" made with frozen raspberry lemonade, fresh squeezed lime juice and carbonated water.

INGREDIENTS

1 (12 fluid ounce) can frozen raspberry lemonade concentrate
3 cups water
3/4 teaspoon lime juice
1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
1 cup crushed ice
1 cup fresh raspberries, garnish
1 cup fresh mint, garnish

DIRECTIONS
In a large punch bowl, combine raspberry lemonade concentrate, water and lime juice. Stir in lemon-lime soda and crushed ice. Garnish each glass with a fresh raspberry and a mint leaf.

Try it for your next party, it's sure to be a summer favorite!
